Pork candy on a stick, or pork belly lollipops, these have become a viral food and I had been talking to my butcher over 2 years ago about doing this very cook. I just never got around to making these lollipops. So now is the time, as they say, better late than never.
Pork is such a great protein to smoke and using pork belly has the perfect fat to meat ratio for smoking and slow cooking. In this video I’ll show you how to season and cook this pork belly low n slow to perfection and then glaze it to make it the perfect meat candy.
As with all my recipes I run through the selection, preparation, seasoning, BBQ set up, times and temps, so you can recreate this recipe at home.

Main Ingredients:
1kg (2.2lbs) Pork belly (skinless)
Inside Rub Ingredients:
1 tablespoon of maple syrup
1 tablespoon of sweet rub (I used granulated honey from Lanes)
Outer Rub Ingredients:
1 to 2 tablespoons of sweet and savory BBQ rub (I used Four Monkeys Pork)
Glaze Ingredients:
¼ cup of BBQ sauce (I used Cham Cham Honey Pepper Ganjang)
50 grams (1.7oz) of unsalted butter
2 tablespoons of brown sugar
