Recipe
*For the dough^
500g plain flour
7g dried active yeast
5g salt
25g caster sugar
10g cinnamon
20g vegan butter (sub dairy butter if desired)
300ml hot water (hot but not scalding)
For the filling
50g soft brown sugar
30 vegan butter, melted
10g cinnamon
For the glaze
50g icing sugar
15ml plant based milk
METHOD
1. Preheat your oven to 180°C and line a large cake tin or oven proof dish with parchment paper, or grease it with oil/butter.
2. In a stand mixer or bowl, add the flour, salt, yeast, caster sugar and cinnamon and mix briefly to combine. Add the hot water and the butter, then run the mixer or use your hands to create a smooth dough. If it seems a bit dry you can add a splash of water.
3. Once you have your dough, turn it out onto a floured surface, knead lightly and shape into a ball. Leave it to rest for 10 minutes. This is a good time to make the filling. Melt the butter in a microwave or over the hob and add the cinnamon and brown sugar. Mix to combine and set aside.
4. When you return to your dough it should be a little bit springy and pliable. If it feels tough, leave it another 10 minutes.
5. Flour your dough and a rolling pin and begin rolling it, until it’s about 1.5cm thick. You can use your hands to gently tug the corners out and shape the dough while you roll it, so you end up with a large rectangle.
6. Now spread the filling you made over the dough, making sure to coat it as evenly as possible. With damp fingers, press along the long edge nearest to you. This will make sure the dough sticks to itself when you’ve finished rolling.
7. Carefully begin rolling the dough into a sausage shape starting from the long edge opposite you. Go slowly and carefully, until the dough is completely rolled and the seam is underneath. Flour your surface again and reshape your dough slightly, if necessary, give it a little roll and square the ends.
8. With your sharpest knife, cut the roll in half, letting your knife do all the work. Don’t press too hard otherwise you’ll ruin the shape of your buns. Cut those two pieces in half again, and then those 4 in half. You should end up with I equal pieces.
9. Arrange the buns into the cake tin and bake for 20 minutes or until golden brown. In the meantime you can make the glaze by simply combining the icing sugar and milk in a small bowl until smooth.
10. While the buns are still hot, top with the glaze.
Enjoy them served warm with a cup of tea or coffee. ☺️
