You can't have my chowder without my clam cakes! I used my electric frier, but you can use a pan with a candy thermometer and 3 inches of oil. I used vegetable (no taste) but you can use canola or peanut....355 degrees works well. Too hot and you'll have nice brown cakes with raw or wet insides. 5 minutes cooking time but flip halfway thru and test one before making them all. Should not be wet inside Always check your oil temp! I used my ice cream scoop, but you can use a serving spoon. you want a little bigger than golf ball size when they go into the oil. BE CAREFUL with children around!!! Keep your pan on the back burner if possible.
