Keto Apple Pie French Toast Casserole!

Ingredients:
16 oz loaf of cinnamon keto bread
6 eggs
1/4 cup brown sugar substitute
2 tsp vanilla extract
2 cups half and half
21 oz. can no sugar added apple pie filling
Streusel:
3 tbsp butter, melted
1/2 cup vanilla protein powder
1/3 cup brown sugar substitute
1/3 cup caramel keto syrup
Directions:
1. Spray a 9x13 baking dish with cooking spray, break the bread up into chunks, and layer them into the prepared pan.
2. In a medium bowl, whisk together the eggs, brown sugar, vanilla, and half & half until incorporated.
3. Pour the mixture over the bread and use a spoon to push the bread into the liquid.
4. Spread the apple pie filling evenly over the bread cubes, cover, and refrigerate 1 hour to overnight.
5. Remove from the refrigerator, preheat the oven to 350 degrees, and melt the butter in a medium microwavable safe bowl.
6. Add the brown sugar and protein powder to the melted butter and mix to combine.
7. Sprinkle or dollop the streusel onto the apples.
8. Bake 45-50 minutes.
9. Remove from the oven, drizzle with the caramel, let cool, and enjoy!!!
This casserole is so yummy! I added some keto salted caramel vanilla ice cream to mine! It was delicious! If you can't find the keto cinnamon bread, you can always use regular keto bread and just add 1 1/2 tsp of cinnamon to it! You could also try it with different no sugar added pie fillings! I think I will try blueberry next or even make my own pie filling for even less carbs! Thanks so much for watching!
