A quick and easy meal - crispy eggplant and a homemade chili bbq glaze! Sarap!
CRISPY EGGPLANT WITH CHILI CHAR SIU GLAZE
INGREDIENTS:
2 Egg plants (sliced into sticks)
½ tsp Salt
½ tsp white pepper
1 tsp Hoisin Sauce
1 Egg white
1 cup cornstarch or AA powder
Veg Oil for frying - HC
PROCEDURE:
1 Mix together Eggplant salt, pepper, hoisin sauce.
2. Dredge in cornstarch
3. Toss in Egg white
4. Dredge again in cornstarch again
5. Deep fry
6. Toss in glaze where freshly fried
7. Top with chopped chives
FOR THE GLAZE
1 tsp chili garlic
½ LKK char siu
1 tsp vinegar
PROCEDURE
1. Mix together & place in a pan until it bubbles toss in freshly fried eggplant.
