INGREDIENTS
4 ounces (about 113 grams) boneless skinless chicken thighs, thinly sliced
1 teaspoon (5 grams) baking soda
3 tablespoons + 2 teaspoons (55 ml total) coconut aminos, divided
2 teaspoons (10 ml) maple syrup
2 teaspoons (10 ml) apple cider or rice vinegar
4 garlic cloves, minced
Avocado oil
8 ounces (about 227 grams) flat rice noodles
1 1/2 cups (about 188 grams) baby broccoli florets, sliced
2 large eggs
INSTRUCTIONS
1. Marinate the Chicken: In a medium-sized bowl, toss the chicken with 2 teaspoons (10 ml) of coconut aminos and the baking soda. Set aside.
2. Prepare the Sauce: In a second medium-sized bowl, whisk together 3 tablespoons (45 ml) of coconut aminos, 2 teaspoons (10 ml) maple syrup, apple cider vinegar, and garlic.
3. Cook the Noodles: Bring a large pot of water to a boil. Add the rice noodles and cook according to the directions on the packaging. When done, drain and toss with a tablespoon of oil so the noodles don't stick together.
4. Blanch the Chicken: Place the pot back over high heat and return to a boil. Cook the marinated chicken until it turns white, then set aside in a large bowl.
5. Char the Baby Broccoli: Pour enough oil into a large wok or skillet to coat the bottom and turn heat to high. Stir-fry the baby broccoli until it turns bright green, and then continue cooking until some edges are slightly charred. Transfer baby broccoli to the large bowl.
6. Scramble the Eggs and Char the Noodles: Rinse and dry the wok. Pour in two tablespoons of oil, and turn heat to high. Scramble the eggs, add the noodles, and toss well. Let them cook undisturbed until the noodles start to char in spots, about 1-2 minutes.
7. Combine and Finish Cooking: Add the baby broccoli and chicken back to the pan, toss well, and let cook until warm. Pour in the sauce, stir fry until everything is coated, allowing some parts to char slightly. Turn off the heat and serve immediately.
