I spent a few weeks coding a procedurally generated galaxy in Unity 3D. I took a lot of inspiration from Space Engine.
I ended this project when I decided that I would rather work on a much smaller space like a tiny dwarf galaxy or nebula with far fewer stars. This way I can do a lot more with a lot less. Such as give every star a velocity in the world. Or simulate space economies within every star system.
