Ingredients:
Cookies:
115g unsalted butter, softened to room temperature
215g packed light or dark muscovado sugar
1/4 teaspoon salt
1 teaspoon vanilla extract
1/2 teaspoon baking soda
25ml. Aquafaba + 10ml. Vegetable oil
135gr. creamy peanut butter
120gr. all-purpose flour
170gr. toasted peanuts (20min. at 160°C)
Chocolate Icing
226gr. semi-sweet or bittersweet chocolate chopped
30gr. unsalted butter, softened to room temperature
40gr. Honey
1-2 Tbsp of soy milk
Yield: 30 cookies
