#Braised Pork in Dark Soy Sauce#
材料/Ingredients:
630g-五花肉 (洗净,切块)
12瓣-蒜头 (洗净,拍扁)
1大匙-油
500ml-清水
600g-pork belly (washed, cut into pieces)
12 cloves-garlic (washed, smashed)
1 tbsp-oil
500ml-water
少许-薯粉水 (勾芡)
A little-Potato Flour Water (Thicken)
调味料/Seasoning:
11/2大匙-生抽
1小匙-盐
1大匙-黑酱油
11/2小匙-糖
(调味料分量依各人口味加减)
11/2 tbsp-light soy sauce
1 tsp-salt
1 tbsp-dark soy sauce
11/2 tsp-sugar
做法:
1-首先将切成块状的猪肉放进热干锅内翻炒一下,这样可以减轻猪肉骚味,然后再用清水洗一洗,备用。
2-热油锅爆香蒜瓣,加入五花肉拌炒至猪肉出油半熟。
3-加入水,水盖过猪肉盖起锅盖用大火煮滚后在转中小火燜至水收一半.
4-大开锅盖,加入糖,盐,生抽调味,最后加黑酱油搅拌均匀调色.
5-盖上锅盖焖煮至猪肉软透入味和汁比较浓稠.
6)大开锅盖倒入粟粉水勾芡拌匀盛出即可上桌享用。
Method:
1-First put the cut pork into a hot dry pan and fry it for a while, which can reduce the smell of pork, then wash it with clean water and set aside.
2-Heat the oil pan and sauté the garlic cloves until fragrant, add the pork belly and stir-fry until the pork is half-cooked.
3-Add water, the water covers the pork, cover the pot, bring to a boil over high heat, then turn to medium and low heat and simmer until the water is reduced by half.
4-Open the pot, add sugar, salt, light soy sauce to taste, and finally add black soy sauce and stir evenly Color.
5-Cover the pot and simmer until the pork is soft and the flavor is thick.
6-Open the lid of the pot and pour in the cornstarch water to thicken the cornstarch, stir well and serve.
