NOTES
1. Use alkalized/Dutch-process cocoa for an intense chocolate flavour.
2. Add vanilla extract to enhance the overall taste.
3. Bloom the cocoa with hot coffee or water, deepening the chocolate flavour and adding richness.
INGREDIENTS
For the cake
240 gm all-purpose flour (2 cups )
70 gm cocoa powder ( 1/4 cup plus 1 tablespoon)
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
2 teaspoons instant coffee powder
pinch of salt
3 medium eggs
120 gm brown sugar ( 1/2 cup )
120 gm granulated sugar ( 1/2 cup)
1 1/2 teaspoon vanilla
180 ml milk at room temperature (3/4 cup).
120 ml oil ( 1/2 cup )
180 ml hot coffee (3/4 cup)
For the Ganache ( If using dark chocolate )
300 gm warm heavy cream
300 gm finely chopped dark chocolate
For the ganache ( If using milk chocolate )
150 ml warm heavy cream
300 gm chopped milk chocolate
*Warm the heavy cream: In a small saucepan, gently heat it over medium-low heat until warm (around 110°F or 43°C). It should be warm to the touch, but not boiling.
*Combine with chocolate: Pour the warm cream over the chopped chocolate and let it sit for 2-3 minutes to soften. Then, stir until smooth and fully combined.
