CORNMEAL PORRIDGE, with fresh coconut milk

This version of cornmeal porridge is, rich, creamy, smooth and and absolutely tasty!!

(PLEASE NOTE)
(1 cup of cornmeal with 1 1/4 cups water)
2 cups of cornmeal was stated in the video, sorry for that error.
*Ingredients*
1 cup yellow cornmeal
1 1/4 cup water (for mixing cornmeal)
1 cup coconut milk ( freshly blended or can)
1/2 tsp salt
1 tbsp vanilla essence
1/2 cup sugar
1/2 cup full cream milk
1 cup condensed milk ( or sweeten to your taste)
1/4 tsp grated nutmeg
3 leaves of bay leaf, cinnamon or cinnamon stick
** If you are excluding coconut milk, use 2 cups full cream milk
** half cup of vanilla lasco goes great as well
Add 4 cups of water to a pot and put to a boil, add leaves, boil for 2 minutes
Mix 1 cup cornmeal with 1 1/4 cup water, mix thoroughly to avoid lumps, add cornmeal mixture to boiling water, stir constantly.
Put flames on low
Cover and allow to cook for 10- 15 minutes, stir in between minutes.
Add coconut milk, salt, vanilla essence, full cream milk and nutmeg
Turn stove off then sweeten with sugar, and condensed milk to your taste.
Serve and enjoy!!
