2 cups old-fashioned rolled oats
2 1/4 cups unsweetened almond milk or other preferred milk
1/3 cup maple syrup
2 tablespoons coconut oil, melted
1 teaspoon cinnamon
2 tablespoons ground flaxseed
2 tablespoons chia seeds
1 teaspoon baking powder
1 teaspoon vanilla extract
pinch salt
3 medium ripe peaches, 2 chopped and one sliced for topping, divided or 1 cup of each
1/4 cup raw almonds, chopped
Preheat the oven to 350°F. In a baking dish, add oats, cinnamon, chia seeds, ground flaxseeds, salt, and baking powder. Mix to combine.
Next, add almond milk, vanilla extract, maple syrup, coconut oil, salt and 1 cup chopped peaches. Mix everything to combine.
Top with sliced peaches. Bake for 45-50 minutes, or until the top is golden. Over the last 10 minutes of baking, sprinkle with the chopped almonds.
Remove the baked oatmeal from the oven and let it sit for 5-10 minutes to allow to cool before slicing into servings.
Serve baked oatmeal with a drizzle of maple syrup or warm milk. (It's not too sweet, so you may want to drizzle on some maple syrup.)
