Bread & Butter Pudding, but not as you know it. Throw away your crusty old recipe and try this one. Thank me later xx
PUDDING
Ingredients: 7-8 cups French bread, cubed; 3 cups milk; 3 large eggs; 1/2 cup brown sugar; 1.5 cups white sugar (I used half-and-half - IYKYK); 2 tablespoons vanilla bean paste; 1 teaspoon cinnamon; 1/4 teaspoon Allspice (or not); 1 cup raisins OR White Chocolate Chips & Raspberries
Bake: 180’c for 35-40 minutes
CUSTARD SAUCE
1 cup heavy cream; 1 cup milk; vanilla bean paste; 6 egg yolks; 6 tablespoons white sugar (I used half-and-half); 1/4 teaspoon rum (optional)
Bring milk and cream to a light boil.
Take off heat.
Whisk egg yolks & sugar until pale yellow.
Add a tablespoon of hot milk/cream to egg and whisk, continue to add milk/cream in gradually while whisking until half the milk is added.
Then put the whisked egg liquid into the saucepan with the milk, thicken over medium heat while stirring constantly.
Add vanilla at some point.
Serve pudding with custard sauce and fresh raspberries! Enjoy xx
