There are no "right" or "wrong" plot styles or colors in AutoCAD. The real magic is in using the right plot style for your color scheme.
Problems usually arise when an engineer starts a drawing with "the best template" according to person A, then plots it with "the best plot style" according to person B. The project template has to be matched with the plot style.
The stock plot style "grayscale" that comes with most iterations of AutoCAD looks OK for drafts, but to get the real magic is in making your own plot style that converts all colors to black, but with different lineweights. When you also make good project templates for this plotstyle, and you and your colleagues get used to working with it, you'll consistently get great results.
