Here’s a step-by-step recipe to make Bhindi ki Sabzi (Okra Fry) – a simple and delicious Indian-style stir-fried okra dish.
🌿 Ingredients:
• Bhindi (Okra/Ladyfinger) – 250 grams
• Onion – 2 medium (sliced or chopped)
• Tomato – 1 medium (optional, chopped)
• Green chilies – 1-2 (slit or chopped)
• Ginger – 1 inch (grated or finely chopped, optional)
• Garlic 5 cloves chopped
• Turmeric powder – ¼ tsp
• Red chili powder – ½ tsp
• Coriander seeds – 1 tsp
• Jeera – 1 tsp
• Garam masala – ¼ tsp (optional)
• Salt – as per taste
• Oil – 2-3 tbsp
• Lemon juice or amchur (dry mango powder) – ½ tsp (for tanginess)
• Fresh coriander leaves – chopped (for garnish)
Wash and Dry Bhindi:
Rinse bhindi well and pat them completely dry with a towel.
This is important to avoid stickiness while cooking.
Cut the Bhindi:
Trim both ends.
Slice into ½ inch pieces (slightly diagonal or round, your choice).
Step 2: Prepare Masala Base
In the same pan, add 1 tbsp oil if needed.
Add chopped onions and green chilies. Sauté till onions turn golden.
(Optional) Add grated ginger, garlic and sauté for 30 seconds.
Add tomatoes and cook till soft (optional, skip for dry version).
Step 3: Add spices
Add turmeric, red chili, coriander powder, jeera powder and salt.
Mix well and cook the masala for 1–2 minutes.
Step 4: Combine Bhindi with Masala
Add chopped bhindi and sauté on medium heat.
Cook for 8–10 minutes until bhindi becomes soft and slightly crispy.
Stir occasionally, don’t over-stir to prevent sliminess.
Mix gently to coat bhindi with the masala.
Cook covered for another 5–7 minutes on low flame, stirring occasionally.
Step 5: Final Touch
Add garam masala and amchur or lemon juice.
Mix and turn off the flame.
Garnish with fresh coriander leaves.
🍽️ Serving Suggestions:
Serve hot with roti, paratha, or dal-chawal.
Can be packed for lunchbox as well.
