RECIPE OF DEGECHA SALAN/ SHIKORI DHAAN
1kg - Mutton
4 - Tomatoes
1tbsp - Red chilli pwd
1/2 tsp - Haldi pwd (Turmeric pwd)
Mix whole Garam masala
1/2 tsp - Saunf pwd (Fennel seeds pwd)
1tbsp - Dhania pwd ( Coriander pwd)
4tbsp - Dry coconut roasted
2tbsp - Oil
1tbsp - Ghee
salt to taste
Chop finely 2 onions and 2 tomatoes crush it and add it to the mutton, then add ginger garlic paste, salt , turmeric and keep it aside for an hour.
Then heat ghee and oil add whole garam masala let it crackle then add remaining sliced onions. Once the onions turns translucent add remaining chopped tomatoes and saute for some time.
Then add marinated Mutton to it and saute for sometime add 1 cup water close the lid and cook till the Mutton turns soft and tender. Then add paste of roasted dried coconut to the sauted Mutton. Mix well and saute well till the oil leaves its sides. Add garam masala powder and cook for sometime. Garnish with chopped coriander leaves.
Serve hot with jeera rice, pickle and papad.
