KUNAFA RECIPE
1. Make the Sugar Syrup
Ingredients:
1 cup sugar
1 cup water
1 tsp rose water
1 tsp lemon juice
*Steps:
1. Heat sugar + water in a saucepan.
2. Once it boils, lower the heat and simmer for 5–7 minutes until slightly sticky.
3. Add lemon juice and rose water.
4. Turn off heat and let the syrup cool completely.
2. Make the Cream Filling
Ingredients:
2 cups milk
1 tbsp milk powder
2 tbsp cornstarch
2 tbsp sugar
1½ tbsp fresh cream
1 cup mozzarella or ricotta cheese
*Steps:
1. In a pan, whisk together milk, milk powder, cornstarch, and sugar (no lumps).
2. Cook on medium heat, stirring continuously.
3. When the mixture becomes thick and pudding-like, turn the heat low.
4. Add fresh cream and mix.
5. Turn off the heat and add mozzarella/ricotta cheese.
6. Stir until the cheese melts into the cream.
7. Let it cool slightly.
3. Prepare the Kunafa Dough
Ingredients:
300 g kunafa vermicelli (or normal vermicelli, crushed)
2 tbsp castor sugar
1 cup melted butter
*Steps:
1. Crush the vermicelli using your hands into small pieces.
2. Pour melted butter over it and mix well so every strand is coated.
3. Add castor sugar and mix it well
4. ASSEMBLE THE KUNAFA
Option A: Cheesecake-Style Cream-Filled Kunafa
1. Grease a baking pan with butter.
2. Spread half of the buttered vermicelli evenly at the bottom.
3. Press it down firmly.
4. Pour the entire cream filling over this layer.
5. Add the remaining vermicelli on top and press gently.
*Option B: Cheesier Kunafa (optional)
Add a layer of shredded mozzarella directly above or below the cream layer.
5. BAKE OR COOK ON STOVE
If Baking (Recommended):
*Preheat oven to 180°C.
Bake for 20–30 minutes, until the top becomes golden and crispy.
*If Cooking on Stove:
1. Place the pan on very low heat.
2. Cover and cook for 5 minutes on each side
3. When the bottom is golden, flip onto another pan to brown the top.
5. Final Step – Add Syrup
1. Pour the cool sugar syrup over the hot kunafa as soon as it comes out of the oven/stove.
2. Let it soak for 5 minutes.
3. Garnish with pistachios (optional).
7. Serve
Cut into slices and serve warm for the best stretchy texture.
Reheat before eating for the perfect taste.
