Recipe.
Ingredients:
250g hari pyaz (chopped)
2 tamatar (chopped)
1 medium pyaz (chopped)
1 inch adrak
8–10 lahsun
3–4 hari mirchi
1/2 Cup besan
1 cup chawal ka aata
½ tsp haldi
1 tsp lal mirch powder
1 tsp dhaniya powder
Namak swad anusar
Tel – 2–3 tbsp
Jeera – 1 tsp
Hara dhaniya
Full Recipe (Easy to Speak & Record Format)
Step 1 – Hare Pyaz Base (Mangodi mixture)
1. 250g hare pyaz aur 2 tamatar ko barik chop kar lijiye.
2. Ek bowl mein hare pyaz, tamatar aur thoda namak daal kar 2–4 minute acche se mix karke side rakh dijiye.
3. Ab ismein dalen:
½ cup besan
1 cup chawal ka aata
½ tsp haldi
1 tsp lal mirch
1 tsp dhaniya powder
4. Sab ko ache se mix karo, thoda sa geela–sa dough banakar rakh dein.
Step 2 – Gravy Masala
1. Mixie jar mein lein:
1 inch adrak
8–10 lahsun
3–4 hari mirchi
Thoda hara dhaniya
Inhe dardara pis lein.
2. Kadhai mein tel garam karein.
3. 1 tsp jeera daal kar tadka de.
4. Badi pyaz aur hare pyaz ke safed hisse ko bhunein.
5. Dardara paste daal kar bhunein.
6. Sookhe masale daalen (haldi, lal mirch, dhaniya powder, namak thoda hi).
7. 2 bade tamatar daal kar acche se bhunein.
8. Jab tamatar gal jaaye to pani daal kar gravy ko patla rakhein.
9. Ubalne ke liye dhak kar chhod dein.
Step 3 – Mangodi Banana
1. Ubalti hui gravy ko high flame par rakhein.
2. Banaye gaye mixture ki choti-choti mangodi tod kar directly gravy mein daalte jaayein.
3. 2 minute mat hilaye — nahi to mangodi tut jayegi.
4. 5 minute tak high flame par pakne dein, jab tak mangodi upar aa jaye.
5. Gas slow kar dein, phir halka sa mix kar lein.
6. Upar se hara dhaniya daal kar serve karein.
Steamed Version (Extra Tip for Audience)
Agar aap mangodi ko healthy banana chahte hain:
Besan–hare pyaz mixture ko plate mein set karke steam karein,
Pieces cut karke tawa par fry karein,
Inhe gravy mein daal kar special steamed mangodi sabji bana sakte hain.
Ya phir in pieces ko chatni ke saath snacks ki tarah bhi serve kar sakte hain.
