Ingredients
Pearl millet / Kambu flour – 1 cup
Peanuts – ¾ cup
Jaggery powder – 1 cup
Cardamom powder – ½ tsp
Ghee – 1 tbsp
Split cashew nuts – 5-10
Raisins – 15-20
Warm water – ½ cup
Process
1. Heat a thick bottomed pan over medium flame and add ¾ cup of peanuts
2. Roast it till it turns crispy
3. Take it out and allow it to cool
4. Remove the skin and keep aside
5. In the same pan heat 1 tbsp of ghee
6. Roast some cashew nuts and raisins
7. Keep it aside
8. In the same pan roast 1 cup of pearl millet flour over medium flame for 6-7 minutes
9. Stir continuously
10. Now turn off the flame
11. In a blender add the roasted peanuts and 1 cup of jaggery powder
12. Pulse it for a few seconds
13. Add this into the roasted pearl millet flour
14. Add the cashew nuts, raisins and ½ tsp of cardamom powder
15. Mix well
16. Now add ½ cup of warm water
17. Mix well
18. Make small balls of the mixture
19. Healthy pearl millet laddu is ready
