Rainbow Veggie Salad w/ spicy peanut sauce ദ്ദി(˵ •̀ ᴗ - ˵ ) ✧

My hyper fixation meal at the moment because it’s veggie rich, high in protein and perfect for the summer months. Minimal cooking required and you can meal prep this too!

For one serving, I usually use:

⊹ 1/4 head of cabbage
⊹ 1 carrot head of cabbage
⊹ 1-2 mini cucumbers
⊹ 3-5 small radishes
⊹ a handful of peanuts
⊹ 1-2 green onions (I ran out!)
