Eggplant Parmigiana ( Parmigiana di Melanzane ) Recipe

Parmigiana is a classic recipe done in all Italy, a great comfort food! Fried eggplants with tomato sauce, parmigiano and mozzarella: a little symphony of taste.

INGREDIENTS SERVING ABOUT 4/5 PERSONS
2 kg eggplants
600 gr tomato sauce
250 gr diced mozzarella
80 gr parmigiano or grana
3 cloves of garlic
extra virgin olive oil
salt
black pepper
frying oil ( peanut oil usually )
Cut 2 kg eggplants in slice ( 4/5 mm thick )
In a colander put a layer of sliced eggplants and put a couple of pinch of salt on the eggplants. repeat this operation until you have finished the eggplants
put some weight on the eggplants ( a dish would work fine ) and let it rest for 40 minutes. This operation is done to remove the bitter taste from the eggplants
Put the sliced eggplants on a cloth to remove the excess of water, cover with another cloth and press gently.
Now let's fry this sliced eggplants in peanut oil. You can check if the temperature of oil is right by sticking a wooden skewer in it. If bubbles form around the skewer, it is time to add the sliced eggplants.
Cook the eggplants for 2/3 minutes max ( until they change color ) turning occasionally
when they are cooked put them on paper towels to absorb them from the excess oil
Now in a pan put a spoon of extra virgin olive oil and 3 cloves of garlic cut in half, when the garlic is well browned add 600 gr tomato sauce, salt and black pepper. Let the sauce cook for 30 minutes
Now take a baking pan 30 x 20 cm ( in my family we prefer a parmigiana not much thick but if you prefer you can take a baking pan 20 x 15 cm with this ingredients ) and put a couple of tablespoon of tomato sauce
Cover with a layer of fried eggplants, other 2/3 tablespoon of tomato sauce, a generous sprinkling of Parmigiano and diced mozzarella. Repeat this operation until you have finished the fried eggplants.
The last layer should be much more rich of parmigiano and mozzarella ^_^
Cook in oven for 35 minutes at 180° C. Serve until is still hot.
