GHAPAMA | ARMENIAN STUFFED PUMPKIN

Ghapama is an Armenian stuffed pumpkin dish often prepared around the holidays or on special occasions. It’s one of those centerpiece dishes that looks great on any table. It’s also the star of the infamous Harout Pamboukjian song “Hey Jan Ghapama” which is sure to get any party started!

Ingredients
(amounts used in video are larger than this standardized recipe for one pumpkin)

-1 medium-large sized pumpkin
-2 cups long grain rice
-3 cups chicken stock, unsalted
-1 cup butter melted
-½ cup honey
-1 tbsp cinnamon
-2 tsp allspice
-1 ½ tbsp cumin, ground
-1 tsp ginger, ground
-2 tsp nutmeg
-½ cup dried apricots, chopped
-¼ cup prunes, chopped
-¼ cup dates, chopped
-½ cup golden raisins, whole
-½ cup unsalted raw walnuts, chopped
-½ cup unsalted raw almonds, chopped
-2 tbsp orange zest
-Salt to taste
