Mixed Fruit Chia Seed Pudding
Serving size: 4
Ingredients:
1 cup of chia seeds
1/4 cup of strawberries, sliced
1/4 cup of mangoes, small diced
1/4 cup of bananas, small diced
3 cups of non-dairy milk
1 dash of cinnamon powder
Manuka honey (optional)
Mint for garnish
Equipment:
Medium sized container
Serving bowls
Instructions:
1. Place chia seeds into container, add in rest of fruit, and pour non-dairy milk together. 2. Stir around for equal distribution.
3. Place in refrigerator overnight.
4. Scoop into small serving bowls and a sprinkle of cinnamon and 1/4 tsp of manuka honey into each individual bowl.
5. Garnish with mint.
6. Serve and enjoy!
Golden Turmeric Salad
Serving size: 4 - 6
Ingredients:
2 pints of cherry tomatoes, halved
6 Persian cucumbers, chopped
2 Hass Avocados, medium diced
3 tbsp ground turmeric
3 tbsp nutritional yeast
4 tbsp of apple cider vinegar or rice vinegar
1/4 ground black pepper
(Optional: garnish with green onions and/or Japanese furikake) Equipment:
Mixing bowl
Instructions:
1. Take out mixing bowl and prepare vegetables, combine and mix thoroughly. 2. Prepare turmeric, nutritional yeast, vinegar and black pepper and add into mixture. 3. Add garnishes if desired, mix thoroughly.
4. Serve immediately and enjoy!
