Find the recipe
For the chickpeas:

1. Soak 1 cup of dried white peas in water for an entire night or 8-9 hours (the water should cover the peas).
2. After soaking, boil them in a pot on the stove with:
3 cups of water
1/4 teaspoon turmeric powder
1/2 teaspoon red paprika
A pinch of hing (optional)
1 tablespoon of oil
Salt to taste

3. Mash the peas every 10 minutes and cook until they become soft and thick. This can take some time.

4. If you're using a pressure cooker, add just enough water to cover the peas and cook for 30 minutes.

For the potatoes:

1. Boil 2 large potatoes.
2. When a knife easily pierces the potato, it means they're ready.
3. Drain them, peel off the skin, and mash into a puree.
4. Add:
1/2 teaspoon red paprika
1/2 cup breadcrumbs
Salt to taste

Mix well and make sure there's enough salt.

5. Form medium-sized balls, slightly flatten them to resemble patties, and set aside.
6. Heat 3-4 tablespoons of ghee or a bit of oil in a pan and fry the patties.
7. Use a spatula to check if the patties are golden and crispy on both sides.
8. Set aside on paper towels to absorb excess oil.

Assembling the dish:

1. In a bowl, place 3-4 tablespoons of the ragda curry, then put 2-3 patties on top.
2. Add 2-3 tablespoons of yogurt over the patties.
3. Add green chutney, red chutney, and sweet chutney as per your preference.
4. Sprinkle chopped onions and, if you like, some chopped tomatoes on top.
5. Add a pinch of salt, chaat masala, cumin powder, and more salt if needed.
6. Squeeze a little lemon juice.
7. Garnish with sev and some pomegranate seeds.
