This Plum Season, join me, Happy Hungry Hibby! 🥳 In this special episode, I'm celebrating the incredible harvest from my own plum tree. This tree is a true gift, providing me with an abundance of beautiful fruit to get creative in the kitchen.

This video is relevant because it shows another one of the many recipes, a plum compote, that can be made with a plum harvest.
PLUM COMPOTE RECIPE
INGREDIENTS
1.1kg Plums or damsons
300g date or coconut sugar
120ml orange juice
3tbsp lemon juice
1 tbsp Ground Sumac
2x Star anise
Cinnamon
6-8 Cardamom pods
METHOD
1. Put your plums or damsons into a large pan and cover with the orange and lemon juice, then bring to a boil for about 15-20 mins or until poached.
2. Meanwhile, grind your sumac into a fine powder using a pestle and mortar or grinder.
3. Remove from heat, place on heatproof mat and allow to cool.
4. Carefully pull the fruit stones out of each fruit and place back into a pan.
5. Add back to a gentle heat to simmer and add all the sugar to dissolve, then add your spices and citrus juice.
6. Place lid on and simmer for 30-40 mins, to allow flavours to infuse with spices.
7. Remove the star anise and then allow to cool.
8. Transfer into your labelled storage jars.
9. Enjoy your compote!
