⭐ Mumbai Style Pav Bhaji Recipe
🧅 Ingredients (for 4 servings)
For Bhaji
• 3–4 medium potatoes (boiled & mashed)
• 1 cup cauliflower (finely chopped)
• 1 cup green peas
• 1 cup capsicum (finely chopped)
• 2 large tomatoes (finely chopped)
• 2 medium onions (finely chopped)
• 2 tbsp ginger-garlic paste
• 2 tbsp butter
• 2 tbsp oil
• 2–3 tbsp pav bhaji masala
• 1 tsp Kashmiri red chilli powder
• ½ tsp turmeric
• Salt to taste
• 1 tbsp lemon juice
• Fresh coriander (chopped)
For Pav
• 8 pav buns
• Butter as required
• A pinch of pav bhaji masala for toasting

⭐ 👩🍳 Method
1. Prepare the Vegetables
• Boil potatoes, peas and cauliflower. Mash lightly and keep aside.
2. Make the Masala Base
• Heat butter + oil in a pan.
• Add onions and sauté until golden.
• Add ginger-garlic paste and cook till raw smell goes.
• Add tomatoes and cook until soft and pulpy.
3. Add Spices & Veggies
• Add turmeric, chilli powder, pav bhaji masala and salt.
• Mix well.
• Add boiled veggies and capsicum.
• Mash everything together using a potato masher.
4. Simmer & Flavor
• Add water to adjust consistency.
• Cook 10–12 minutes on low flame.
• Add more butter if you want a richer taste.
• Finish with lemon juice and coriander.
5. Toast the Pav
• Heat butter on tawa.
• Add a pinch of pav bhaji masala.
• Toast pav until golden.
