This Butternut Squash Mac and Cheese is a perfect kids vegan recipe because it is a HEALTHY dish that they ACTUALLY love to eat. My husband and I love to eat it as well, it is good for the whole family.

It is plant-based, packed full of nutrients, protein, and healthy fats! This butternut squash mac and cheese is super easy to make as all you do is roast the butternut squash and then toss it in the blender along with some pantry staples to create a super creamy sauce.

I love to make this in a large batch to freeze for later meals when I am short on time. I hope you guys love it as much as my family does!
