Bison, the other red meat. Ostrich, the other, other red meat. Both are very lean, very healthy, and darn GOOD! A quick sear, followed by indirect cooking will result in out-of-this-world flavor. Keep an eye on 'em! Don't let them get much above 140 degrees F in temperature. The Ostrich was awesome! The Bison was the BEST tasting Ribeye I've ever had. Seriously, Bison ROCKS!
I didn't bombard these steaks with any fancy sauce, just let the meat do the talkin'!
So, don't hide your head in the sand, give them a try!
