If you think good Steak Fajitas can only be enjoyed at a restaurant, think again. In this video, I share an Easy Marinade Recipe and Tips for achieving tender and delicious steak fajitas at home. So fire up the grill and continue reading for the recipe.
Steak Fajitas
2 lbs. flank steak (or skirt steak), fat and membrane removed
1/4 cup olive oil (or neutral oil)
the juice of 2 oranges
the juice of 2 limes
1 Tbsp. soy sauce (or Worcestershire sauce)
3 garlic cloves, minced
salt & pepper to taste
1 Tbsp. cumin
1/2 large onion cut into strips
1 red bell pepper, sliced thin
1 green bell pepper, sliced thin
*Serve with flour tortillas, your favorite salsa, guacamole, sour cream, and shredded cheese.
Remove fat and membrane from steak. You may need to cut into smaller, more manageable pieces. Set aside while making the marinade.
In large bowl, combine oil, fresh squeezed orange juice, fresh squeezed lime juice, soy sauce, minced garlic, salt & pepper, and cumin.
Take pieces of meat and place in a large ziplock bag. Add chopped onions to same bag. Then pour marinade into bag, ensuring meat is fully coated. Remove any air before sealing. Then place in bowl and put it in the refrigerator to marinate 2 to 8 hours.
When meat is marinated to your liking, fire up the grill to 400º to 500º
Remove marinated meat from bag and place on hot grill. Let cook on all sides, flipping over and rotating meat every few minutes. Cook to your preferred level of doneness. (Typically, internal temperature should reach 145º.) Remove from grill and let rest covered 10 minutes before cutting.
Meantime, heat a skillet over the grill with olive oil on it. Once hot, place sliced bell peppers on it, season with salt and pepper, and add sliced onions that were left in the marinade bag. (Be sure to let some of the marinade go over the bell peppers while cooking.) As bell peppers begin to soften, slice fajita mean into strips, cutting against the grain. Place strips of meat onto griddle with bell peppers and mix everything together. Serve while still hot and sizzling, and enjoy!
