Oven: 150 degrees Celsius
Ingredients for the baked celeriac:
500 grams of flour
500 grams of coarse salt
300 grams of water
1 celeriac
Ingredients for the celeriac broth:
1 celeriac
2 onions
7 bay leaves
10 grams of coriander seeds
250 grams of dark rum
Xantana, salt & tarragon vinegar
Ingredients for the celeriac cream:
300 grams of the cooked celeriac trimmings
75 grams of vegetable stock
Ingredients for the celeriac tartare:
150 grams of tartare
75 grams of cream
Ingredients for the celeriac crispy:
25 grams of flour
4 grams of salt
20 grams of hazelnut oil
60 grams of celeriac cream
20 grams of water
