Roast Pig - SUPER CRISPY SKIN - in an Ecuador Market | Where to Eat in Quito

Maybe the best food in all of Ecuador is their whole roast pig called hornado. It's sierra Ecuadorian food, which is usually very filling. The word 'hornado' comes from the word 'hornear', which means to bake. I love to get this right in the market. Markets in Ecuador are a thing of beauty. There are so many fruit and vegetable varieties that it's like an abstract painting of shapes and colors. Most markets have a food section where you can get delicious local delicacies for cheap. A plate of hornado, with all the trimmings, is only $4. It's a lot of food and it's incredibly delicious.
While roasted pig in Ecuador is generally prepared in the same way across the country, the sides that come with hornado with differ from place to place. This is because the climate, the altitude, the soil conditions, and therefore what they grow - they're all so different depending where you are in Ecuador. In Quito, you'll likely get llapingachos (a grilled mashed potato with cheese), some avocado, a bit of a side salad, and some SUPER CRISPY pork skin (chicharones). This is essentially pork rinds, but made fresh and not processed like the snack versions. It's incredibly rich and crunchy. So deadly!
