Are y’all a fan of Lemon? Well I’ve got a treat for y’all!! Today I’ve got a great Lemon recipe to share and it is a Lemon Lover’s dream, Homemade Lemon Curd! Light, refreshing, tart and full of fresh Lemon flavor; perfect on your favorite dessert also a great spread for Toast, Biscuits, Bagels, and more! Once you taste it, your never buy Store-Bought Lemon Curd again! These will also make great gifts to give to friends and family!
6 extra-large eggs
7 large lemons, all 7 zested and 1 cup freshly squeezed lemon juice
1 cup white sugar
1/4 teaspoon kosher salt
1/2 cup (2 stick, 8 tablespoons) unsalted butter, cut into cubes
1/2 teaspoon pure lemon extract
Makes about 2 1/2 cups lemon curd
In a medium saucepan, add in the sugar and the lemon zest. Using your fingers between them, rub the sugar and zest together, this helps release the oils. Pour in the lemon juice and gently stir it into the sugar and zest mixture. In another bowl, add in the eggs and kosher salt. Using a fork or whisk, beat together until well blended. Pour the eggs mixture into the sugar and lemon juice mixture and whisk or stir together. Set the burner over low heat. Cook, stirring constantly until the lemon curd thickens and it reaches 170 degrees on an instant read thermometer or until it coats a rubber spatula. Using a large bowl with a mesh strainer, pour the curd and strain it. Once it strained, add and stir in the butter cubes and lemon extract until well combined and the butter melts. Pour the curd into a mason jar or airtight container and store in the refrigerator. It will thicken up when it cools.
It should keep for about 2 weeks, longer if frozen.
