ACKEE AND SHRIMP
Ingredients
1 pound cooked shrimp
1/2 cup vegetable oil
6 cloves garlic, finely chopped
2 sprig fresh thyme
1/2 onions large, chopped.
4 scallions, chopped (optional)
1 cup sliced assorted bell peppers (red, green, yellow, orange)
1/4 Scotch bonnet pepper, finely chopped with seeds removed.
2 (40-ounce) can ackee, drained
1 teaspoon freshly ground black pepper.
1 teaspoon paprika
1 teaspoon seasoning salt
1 teaspoon garlic powder
1 teaspoon black pepper
1 teaspoon
DIRECTIONS:
1. Remove all excess shells from the shrimps then place in cold water mixed with lime juice. Drain and cut into two pieces then set aside.
2. Heat the oil in a medium skillet over medium heat. Then add herbs, veggies and powdered seasonings, cook for 30 seconds. Add the shrimps stir for 2 mins followed by the pre-cooked Ackee let it cook for 2 minutes. Stir the entire mix as needed. Garnish the cooked meal with fresh parsley & parsley flakes.
