Ingredients
2 No – Cauliflower
1 Tbsp – Oil
2 No – Bay leaves
1 Tsp – Cumin seeds
1 Tbsp – Ginger chopped
3 No – Green chili chopped
1 No – Onion chopped
3 No – Potato
Salt to taste
3 No – Tomato
1 Tbsp – Coriander powder
1 ½ Tsp – Red chili powder
½ Tsp – Turmeric powder
1 Tsp – Cumin powder
1 Tsp – Garam masala
1 Litre – Water
10-15 No – Coriander sprig
Method:-
Cut the cauliflower into medium florets. Wash and cut the potatoes into medium cubes.
Roughly chop the tomatoes and onions.
Heat oil in a kadai. Add bay leaves and cumin seeds. Let them splutter.
Add chopped ginger and green chillies. Sauté for a few seconds.
Add the chopped onions. Cook until soft and lightly golden.
Add the potatoes and sauté for 2–3 minutes.
Add the cauliflower florets and mix well. Cook for another 3–4 minutes so they get a light roast.
Add the chopped tomatoes and salt. Cook until the tomatoes soften and break down.
Add the Coriander powder, Red chilli powder, Turmeric powder, Cumin powder. Mix and sauté until the masala releases oil.
Add water and mix well. Close the lid and cook for 1 whistle on medium flame + 5 whistle on low flame.
Let the pressure release naturally.
Add coriander sprigs chopped and mix well.
Turn off the heat and let it rest for 5 minutes for the flavours to settle.
Now side out in serving bowl and garnish with coriander sprig.
