I grew up calling it seim, but other names for this bean are hyacinth bean, lablab bean, Indian bean, Egyptian kidney bean, and lubia bean. They are a rich source of calcium, protein, vitamin A, and potassium, all of which promote healthy organ function and balance body fluids. It is used as a talkari, often used as an accompaniment with roti or rice and can be cooked with other veggies or salted meat. Today, we harvest, and this day will be written as one of the fondest memories of my adult life visiting Erin. Enjoy.
