SAMHAIN CAKE recipe | Salted caramel pear & nut cake

Today we are preparing a festive dessert for our Samhain or Halloween celebrations: A three-layer Salted caramel nut & pear Samhain cake, infused with warming autumnal spices - The epitome of fall on a plate.
I know, that sounds like a lot of work, but don´t worry - I have a cheat version for you! As well as a version for my vegan witches: A vegan nut cake with juicy pears and a caramelly frosting. So you don´t have to miss out on this moist and delicious bite of autumnal bliss.

With Samhain being the third of the harvest festivals on the pagan wheel of the year, I wanted to make something that included the harvest bounty of this month and had strong ties to the Wiccan holiday - so I choose hazelnuts and walnuts from my garden and peers from my wonderful neighbors garden.

In kitchen witchery and witchcraft, pears are used for prosperity and lasting success spells, but also have strong connections to relationships, unions, harmony, and love interests. They are also said to be strong protection for children - here in Germany, it is custom to plant a pear tree when a daughter is born in the family - an apple tree is planted for boys.
With Samhain being titled the witches' new year, maybe you want to work a little kitchen witch recipe spell to bring some of this in your life during the coming year.
And speaking of apples, if you are not big on pear, you can easily switch them out for apples and keep the recipe as is.

Samhain Cake recipe

Nut & Pear Batter
X 1kg / 35 oz pears
X 10 eggs
X 500 g / 2 1/4 cups butter
X 500 g / 3 cups flour
X 400 g / 2 cups sugar
X 300 g / 2 cups ground hazelnuts
X 2 packages baking powder
X cinnamon
X nutmeg
X allspice
X vanilla sugar or vanilla extract

Salted Caramel Frosting
X 170 g / 3/4 cups Butter
X 70ml / 1/3 Milk
X 300 g / 1 1/2 Brown sugar
X sea salt
X 240 g / 2 cups confectioners sugar

Caramel Pears
X 250 g Wherters original
X 3 TBSP milk
X 3-6 pears


VEGAN Samhain cake recipe

Vegan Nut Cake with juice pears
X 700 g pears
X 500 g Ground hazelnuts
X 400 g sugar
X 500 g semolina
X Vanilla extract
X 2 package baking powder
x 2 TBS flour
X 1 L soy milk (or any other)
X pinch of salt
X cinnamon
X nutmeg
X allspice

Vegan Frosting
x 200 g brown sugar
x 3 tablespoons coconut oil
x 70 g coconut cream
x 110 g vegan butter
x 240 g confectioners sugar
x vanilla extract
x 2 tsp nut / soy / grain milk
x sea salt
