Kobbari Cutlet
Kobbari Cutlet (Coconut cutlet) is a tasty snack. It can be served as a side dish also. Many kids don't like coconut but it tastes good when it is cooked with potato and spices. Those who don't like coconut they will love it. It is easy to cook and really tastes good.
To make Kobbari cutlets:
•In a bowl, add
1 cup grated coconut,
1/4 cup chopped mint
leaves, 1/4 cup coriander
leaves, 6-7 curry leaves,
1 tsp ginger, 1 tsp garlic,
1 tsp chopped green chillies,
1/2 tsp cumin seeds,
2 tbsp gram flour,
pink salt to taste,
2 tsp tamarind pulp,
water as required & mix well.
•In a pan, heat 1 tbsp desi ghee & make patties out of the mixture & cook the patties from both sides on Low Flame.
•Once cooked, serve with coconut chutney & red chutney.
Patoli
Andhra Style Patoli Recipe is a a crumbled spicy mixture of chana dal which can be stir fried with onions and green chillies.
Andhra Style Patoli Recipe (Dal Usli/ Crumbled Dal Recipe) is a dish made from chana dal that is ground to a paste and stir fried with crispy onions and fresh coriander leaves. You can also add extra vegetables like capsicums, carrot to add up to your crunch. The dish very tasty as it is and can also accompanied with rotis of phulkas.
To make patoli:
•Soak split chickpeas lentils Cor half an hour.
•Drain out the water & grind the Lentils.
•In the grinder, add
1 green chilli & make a coarse paste.
•In a pan, heat 1 tbsp olive oil & add a pinch of asafetida,
1/2 tsp cumin seeds,
1/2 tsp mustard seeds,
1 tsp urad dal, curry leaves & stir well.
•Now add 1/4 cup finely chopped onions, pink salt to taste & roast till onions are golden brown.
•Add 1 cup par boiled peas, carrots & sauté.
•Now add Chana dal paste,
1/2 tsp turmeric powder,
red chilli powder to your taste & cook on low flame.
•Serve With rice & desi ghee & enjoy.
Sitaphal Payasam
A delicious dessert for festive occasions, this custard Sitaphal Payasam (Kheer) is easy to make and colourful.
To make Sitaphal Payasam:
•In a pan, heat 1 tbsp
desi ghee & Cry 1/4 cup
cashew nuts & remove.
•Now in the same pan,
sauté 1/4 cup sliced
coconut & remove.
•Add 1 titre milk to the pan & cook till it thickens.
•Now add 1/2 cup coconut sugar & cook, then add 1/2 cup grated coconut & let this mixture cool.
•Once cooled, add 1 cup custard apple puree & chill for 20-30 minutes.
•Once chilled, Garnish the custard apple payasam with cashewnuts, coconut & mint leaves & serve.
