Ingredients:
• Heath Riles BBQ Chicken Rub
• 1 6lb Whole Chicken
Alabama White Sauce:
2 1/2 cups of Blue Plate Mayonnaise
3/4 cup apple cider vinegar
1 tbsp sugar
2 tbsp garlic powder
1 tbsp onion powder
2 tsp horseradish
2 tbsp pepper
Juice of 1 whole lemon
Heath Riles BBQ Everyday Rub to taste
Directions:
1. Start with a whole chicken and remove the backbone and cut it into two chicken halves.
2. Season both halves with Heath Riles BBQ Chicken Rub and place them in the fridge.
3. Prepare the Alabama White Sauce by mixing mayo, apple cider vinegar, fresh lemon juice, horseradish, salt, pepper, garlic powder, onion powder, and Heath Riles BBQ Everyday Rub. Optional: For extra heat, swap in Garlic Jalapeño Rub or blend in fresh jalapeño with or without seeds.
4. Fire up a Weber 22” Kettle Grill using Royal Oak Super Size Briquettes with built-in hickory pellets.
5. Set up a two-zone fire and stabilize the grill at 350ºF.
6. Place the chicken halves on the indirect side of the grill and roast for about 1 hour.
7. After an hour, rotate and char the chicken to build flavor and color.
8. Cook the chicken for a total of about 2 hours and 15 minutes.
9. Once cooked, dunk the chicken in the Alabama White Sauce and serve.
