In Chinese-style tea brewing, one step that throws many people off is the ‘rinse’.
Designed as a way to accelerate flavor extraction and warm the brewing vessel prior to brewing, this step is often misused to “clean” tea leaves, or employed regardless of the tea being brewed, resulting in a loss of flavor.
In this video, Alice looks at the function of the ‘rinse’, offering suggestions on when and why to implement this step in your own tea brewing.
