Coney Dogs with Duck Fat Fries | Stevie's Kitchen

Welcome back to Stevie's Kitchen, where today we're taking you back to college with a classic meal: Coney Dogs featuring homemade Coney Island sauce for delicious chili dogs. This "Game Day Series" meal also includes crispy duck fat fries, making it one of our easy recipes, perfect for any occasion, especially the College Football Playoff and the march to the NFL playoffs! The Roster:

For the Coney Island Sauce:
1 lb Ground Beef (Stevie recommends grass-fed)
2 tbsp Butter
½ Medium Onion, diced
4 cloves of garlic, minced
6 tbsp Tomato Paste
2 cups of water
1 tsp Cinnamon (The “secret” Michigan ingredient!)
1 tsp Garlic Powder
1 tsp Onion Powder
1 tsp Ground Cumin
1 tsp Chili Powder
2 tsp Chili Flakes (For that “Sweet Heat” kick)
Salt & Fresh Cracked Black Pepper (to taste)

For the Duck Fat French Fries:
Large Russet Potatoes (cut into “carrot stick” shapes)
Duck Fat (enough for deep frying, approx. 2–3 cups)
Water & Salt (for parboiling the potatoes)
Extra Salt (for seasoning immediately after frying)
For the Hot Dogs & Assembly
Earl Campbell Brand Hot Dogs (or your favorite all-beef franks)
Hot Dog Buns
Shredded Cheese (Cheddar or American works best)
Optional: Diced raw onions and yellow mustard for traditional Detroit style.
