How to cook The Best Brown Stewed Tripe & Bean with Cow Head Jamaican Style

Jamaican Tripe and Bean is beyond delicious!
Made with cow tripe, fresh bean, fresh herbs,
vegetable and spices. this dish has the
reputation of being a crowd pleaser.
. 3 pound(s) Cow Tripe
.1 pound Broad Bean
.8 Clove Garlic, Minced
. 2 Stalk(2) Scallion, Chopped
. 2 Spring Thyme
. 1large Onion, Chopped
. 2 finger Ginger, Crush
. 1Big Scotch Bonnet Pepper
. 1/2 Green Sweet Pepper, Chopped
. 1/2 Red Sweet Pepper, Chopped
. 1/2 cup Grace White Vinegar (to wash meat)
. 1 Tablespoon Pimento Berries
. 2 Tablespoon Grace Browning
. 1/2 Tablespoon Cayenne Pepper
. 1 1/2 Tablespoon All- Purpose Season
. 1 Tablespoon Natural Season
. 1Teaspoon Garlic Salt
. 2 Tablespoon Apple Cider Vinegar (optional)
. 1 Tablespoon Vegetable Oil
DIRECTIONS:
1. Clean and wash the tripe with vinegar and water.
Wash tripe again with two halves lemon.
Pat dry or put to drain.
2. Season tripe with cayenne pepper, natural season,
garlic salt, all-purpose season, add half ginger, onion,
garlic, scotch bonnet pepper, scallion, pimento berries,
thyme and rub in the seasoning allowing it to marinate
for two hour or overnight.
3. Heat sauce pan or pressure cooker pot on medium heat
add oil to the pot, as soon as oil get hot add season
tripe and stir well. Allow to develop flavour for about
15-20 minutes, stir in between.
4. Add 4 cups water, cover and seal the pressure cooker
and bring to a boil.
5. Allow to pressure cook for about 35 minutes or until
the tripe becomes tender.
6. Turn off flame and allow pressure cooker to cool fully
before opening.
7. Return the flame, add broad bean, sweet peppers
the next half of seasons, and apple cider vinegar
stir and allow to simmer for about 20-25 minutes
8. Turn off flame and enjoy..........
