My throat is a little sore, and I wanted something cold and soothing to eat. I dreamed of having a Dole Whip from Disneyland, so I experimented with making this copycat version. I used a can of pineapple and coconut milk I purchased from Dollar Tree, but next time I plan on buying frozen pineapple and adding less coconut milk. I do still enjoy shopping at the Dollar Tree, but the ingredients used for this experimentation would have been a bit cheaper at the regular grocery store when taking into consideration prices per ounce of food. This concoction had the flavor of the Dole Whip, but next time I will freeze both the coconut milk and pineapple before blending. I want to play around with this copycat idea a bit more.
