I hope this video will be a small encouragement to set yourself up for a productive and intentional week. Tag along on a typical Monday for some deep cleaning, bread baking, pour over making, and more :)
Banana Pumpkin Nut Muffins:
2 cups flour
1 t baking soda
1/3 cup oats
1/2 t salt
1/2 t turmeric
1/2 t nutmeg
1/2 t ginger
1 t cinnamon
1/4 t black pepper
1/3 cup oil
1 cup mashed bananas
1/4 cup pumpkin puree
1/4 cup oat milk
3/4 - 1 cup chopped walnuts (or pecans)
Preheat oven to 350 degrees Fahrenheit and grease/ line two muffin tins. Thoroughly combine dry ingredients before folding in wet ingredients. Fold in the walnuts or pecans. Fill each muffin compartment about 3/4ths of the way full. Bake for 25 mins or until a toothpick comes out clean. Cool for five mins and then remove from muffin tins.
Pumpkin Spice Coffee Creamer:
1 cup oat milk
1/2 cup half and half (or nondairy creamer)
1/2 cup maple syrup
1/3 cup pumpkin pureé
1 T vanilla
1 t pumpkin pie spice
Whisk all ingredients together and store refrigerated in an air-tight container.
