How to Cook Afghan Style “Kalla wa Pacha Qorma” (Head and Trotter Stew)
Ingredients:
• 1 sheep’s head with all four trotters
• 2 onions
• 2 bulbs of garlic
• 500 grams of cooking oil
• 1 tablespoon turmeric powder
• 1 teaspoon Qorma spice mix
• Salt to taste
• 1 cup chickpeas
• 1 cup wheat grains
• 2 tablespoons tomato paste
• Water as needed
• A little fresh garlic (for garnish at the end)
Cooking Method:
1. In a large pot, add the sheep’s head and trotters, chopped onions, whole garlic bulbs, salt, chickpeas, wheat grains, and cooking oil.
2. Add 1 cup of water and cover the pot with a lid.
3. Let it cook on medium heat for about 20 minutes to allow it to steam and begin to soften.
4. After 20 minutes, open the lid and stir the ingredients well. Let the onions and garlic fry and dissolve into the oil.
5. Now add the tomato paste, turmeric, and Qorma spice mix. Stir well until everything is nicely blended and aromatic.
6. Add 2 more cups of water, cover the pot again, and let it cook for another 20 minutes until the meat is tender and the flavors are well combined.
7. Once fully cooked, grate a little fresh garlic on top before serving for extra flavor.
