Today, I introduced 5 authentic and traditional Japanese recipes using 4 types of eggplant. We can make almost dishes with the normal eggplant which you have. But, Mizunasu(水茄子) which is used for pickles is special. If you come to Japan, I highly recommend to try to eat "Mizunasu". You can enjoy Japanese unique eggplant. It needs a lot of practice to make authentic Japanese cuisine. And I hope you'll enjoy traditional Japanese eggplant dishes at Japanese restaurants!!
