Best Caesar Salad Dressing Recipe | Maxi's Kitchen

This is the best Caesar salad you’ll ever eat! I’ll show you how to make the croutons and dressing from scratch and in the process you’ll learn how to make mayonnaise from scratch. Thanks for watching the video and let me know if you have any questions!


RECIPE:

For the croutons:
-1/2 Baguette, cute in ~1" cubes
-1/4 Cup Olive Oil
-1 tsp Garlic Powder
-Large Pinch of Salt
-2 Tbsp Parmesan Cheese

1. Preheat oven to 375°F
2. Toss the bread cubes with olive oil in a large bowl until evenly coated
3. Add the garlic powder, salt, and Parmesan and stir to combine
4. Spread onto a baking sheet in one even layer (try not to overcrowd, they shouldn't be touching) and sprinkle some more parm on top
5. Bake 15-18 min (turning croutons over halfway through) until golden brown and crispy

For the dressing + salad:
-1 Egg Yolk
-1/2 Lemon, Juice
-1 tsp Dijon Mustard
-1/4 Cup + 2 Tbsp Vegetable Oil
-3 Anchovies, minced
-1 Large Garlic Clove, grated or minced
-1/4 Cup Grated Parmesan
-1 Tbsp Water
-2-3 Hearts of Romaine, chopped into medium sized pieces
-Shaved Parmesan

1. Whisk together the egg yolk, lemon, and dijon
2. Slowly add in the vegetable oil about 1 tbsp at a time, whisking to incorporate (the mixture should emulsify and thicken)
3. Add in the anchovies, garlic, parmesan and water
4. Toss the dressing with the romaine, croutons, and shaved parm and enjoy!
