Bean & Lentil Dip Recipe
Preparation Time: 15 minutes
Makes: Multiple servings
Ingredients:
• 1 can black beans, drained and rinsed
• 1 can of lentils, drained and rinsed
• 1 diced bell pepper (any colour)
• 1 diced red onion
• 1/3 to 1/2 cup* Catalina dressing to taste (or other dressing of your choice such as balsamic or other vinaigrette, Italian, French dressing, etc.)
• 1-2 Tbsp chopped, fresh parsley, cilantro, basil, etc. (optional)
Directions:
1. In a medium bowl, mix all ingredients. (*If using a vinaigrette-style dressing, start by adding 1/3 cup dressing, then taste to see if you need more flavour. Thicker dressings will probably require ½ cup.)
2. Chill.
3. Serve with tortilla scoops, pita bread or your choice of dipping foods, spoon over a bowl of torn lettuce, OR wrap in a romaine leaf and enjoy as a light meal or snack!
