Part 3- Sunday Dinner / Birthday Dinner - At this point the steak is ready to go into the smoker. I will bake it in the smoker for about 30 -45 minutes at 225 - 250 degrees until it is done / ready to eat.
At the same time the baked potatoes went into the smoker and have been cooking for about 30 minutes. The ultimate plan is to pull all the food off at the same time. I like a hot meal, all of it together at the same time.
The recipe is below.
🥩 Tomahawk Steak Recipe – Smoked on a Traeger, Seared on a Blackstone (with Ghee, Kinder’s, Garlic & Thyme)
🧄 Ingredients:
1 Tomahawk steak (2–3 inches thick, 2–3 lbs)
Kinder’s The Blend seasoning (salt, pepper, garlic mix)
Fresh garlic (2-3 cloves, sliced, smashed or minced)
Fresh thyme sprigs
Ghee (for searing and basting)
Optional: Extra cracked pepper for crust
🧂 Prep the Steak:
Bring to Room Temp: Remove steak from fridge and rest 45–60 minutes before cooking.
Season Generously:
Rub steak with a thin layer of ghee.
Coat all sides with Kinder’s The Blend.
Press in minced fresh garlic and a few thyme leaves (reserve whole sprigs for basting). - Or add while cooking or basting...
🔥 Step 1: Sear on the Blackstone
Preheat your Blackstone griddle on high heat for at least 10–15 minutes.
Add a spoonful of ghee to the hot griddle.
Add a couple of smashed garlic cloves and thyme sprigs to the ghee to infuse it.
Sear the steak 1–2 minutes per side, pressing gently for a deep crust.
Baste with the ghee/garlic/thyme mix during searing.
Optional: Sear the edges for extra crust and visual appeal
🔥 Step 2: Smoke on the Traeger
Preheat Traeger to 225°F (use hickory or mesquite pellets for bold flavor).
Place steak directly on the grate.
Smoke / Bake until internal temp reaches 115°F (about 45–60 minutes).
Remove from smoker and let rest, loosely covered.
Let is rest for about 10 - 15 minutes. Or until you can not wait any longer ... Dig in!

🌡️ Internal Temp Guide:
Rare: 120–125°F
Medium-Rare: 130–135°F (ideal)
Medium: 135–145°F
Use a meat thermometer for accuracy.
🧈 Optional Finish:
Drizzle or brush extra garlic-thyme ghee over the steak before slicing for added richness.
