SUA GAI + MAK KHAEN
CHICKEN & BROTH :
2 chicken thigh quarters
6 cups water
1 stalk lemongrass, sliced
6 kiffir lime leaves
3 tbsp fermented fish sauce ( padeak ) MUM brand
1 tsp salt
1 tsp msg
PAN ROAST INGREDIENTS :
4 thai chilies
2 shallot, cut in half
2 garlic cloves
HERB & SEASONING :
1 stalk green onions, chopped
1\3 cup Vietnamese coriander, chopped
1\4 cup cilantro, chopped
2 tbsp toasted rice powder
1 tsp chili powder
1 tsp mak khaen
