Ingredients
2 cups (250ml) Basmati Rice
8 Black Peppercorns
8 Cloves
4 Green Cardamom Pods
2 pieces Cinnamon (sticks about 2 inches each)
2 Star Anise
2 to 3 tbsps Ghee
4 cups (250ml) Water
1 tsp Salt
Global Kitchen Secrets Cooking Tips
**Should you use hot or cold water to boil the rice?
Using hot water only seems to speed up the cooking process without any noticeable difference. If you use cold water, you just give the rice more time in the water before it comes to a boil.
**What should you be particularly mindful of while preparing rice?
1. Make sure the cup size (e.g. 250ml) for the water and rice is the same
2. Depending on the utensil, the hot water may overflow when boiling rice with the lid completely shut. Therefore, you may want to avoid completely shutting the utensil even when lowering heat to allow excess steam to escape as it cooks.
3. Allowing the rice to rest for about 15 minutes after it is cooked/the water has dried will cause the cooked grains to evenly rise, preventing it from becoming mushy while fluffing/loosening.
To fluff the rice, you can either use a fork (only for smaller quantities) or a flat rice serving spoon starting from the corners going inwards.
**Remember this basic proportional measurement to cook any quantity of RICE: Use double the quantity of water (cups) and half the quantity of salt (tsps)
Therefore, for 2 cups Rice: 4 cups Water + 1 tsp Salt
